How Orders Move Across the Board
Every entry on the board comes from the order's status, the same status Live Orders shows. Nothing is entered on the display itself.

Pre-orders#
An order for later stays off the board until the kitchen starts it. With stations, that is when its tickets fire — target prep time before it is due. Without stations, it appears an hour before it is due.
How long names stay#
A ready name stays for up to two hours if nobody completes the order, then drops off so the board does not fill with collected orders. Completing orders in Live Orders keeps the Ready column short and the chimes meaningful.
